It began with a simple, honest spark: coffee looked “cool.” But for Worot “Brake-Eyad” Rattanapan, that initial curiosity evolved into a 5-year journey of true craftsmanship. Now the champion of The Thailand National Coffee Roasting Championship 2024 (TNCRC 2024), his path reflects a commitment to constant evolution. Winning the national title on his second attempt wasn’t about ego; it was a quest for growth. Brake-Eyad doesn’t believe in “game-day” miracles. Instead, he treats every daily production batch as a competition stage. By merging rigorous contest standards into his everyday shop routine, he forged the ultimate muscle memory, eventually leading him to represent Thailand on the world stage in Copenhagen.

Brake-Eyad views a roaster through the lens of a chef: greatness requires both exceptional ingredients and unyielding equipment. In the early days of Wonder Room BKK, building consistency meant grueling 8-hour roasting shifts, pushing out 32 kilograms a day to meet growing demands. Through these long hours, his essential partner was the Aillio Bullet. Pushed to its limits, this compact yet powerful machine became his primary training ground. It was on the Bullet that he mastered the nuances of flavor and learned the discipline of precision, the very foundation that carried him from a local shop to the World Coffee Roasting Championship. For Brake-Eyad, roasting is a sincere passion made easier with the right tools.

คุณเบรคเอี้ยดเปรียบนักคั่วกาแฟว่าไม่ต่างอะไรกับ “เชฟ” การจะสร้างสรรค์ผลลัพธ์ที่ยอดเยี่ยมได้ ต้องอาศัยทั้งวัตถุดิบชั้นเลิศและอุปกรณ์ที่ไว้ใจได้ ในช่วงเริ่มต้นสร้างร้าน การรักษาสมดุลของคุณภาพและปริมาณคือโจทย์ใหญ่ เขาต้องยืนคั่วกาแฟอย่างหนักหน่วงติดต่อกันถึงวันละ 8 ชั่วโมง สร้างโปรดักชันกว่า 32 กิโลกรัมต่อวัน ในช่วงเวลาแห่งการทดสอบวินัยนั้น พาร์ทเนอร์ที่ยืนหยัดเคียงข้างเขาคือ Aillio Bullet เครื่องคั่วกะทัดรัดแต่ทรงพลังที่ถูกใช้งานจนกลายเป็น ‘สนามซ้อม’ หลักของเขา บนเครื่องคั่วตัวนี้เองที่เขาได้เรียนรู้จังหวะ สร้างความเสถียรในการคั่วซ้ำที่แม่นยำ ซึ่งเป็นรากฐานสำคัญที่ส่งเขาจากโรงคั่วเล็ก ๆ ไปสู่เวที World Coffee Roasting Championship สำหรับเขา การคั่วกาแฟไม่ใช่เรื่องยาก หากเรามีแพสชันที่จริงใจและมีเครื่องมือที่ช่วยนำทางเราได้เร็วขึ้น
