A great cup of coffee doesn’t start behind the roaster. It starts in the soil. Traveling to the Arabica and Assam origins of Chiang Rai and Chiang Mai showed us the quiet resilience of mountain life. At Le Tor Gold in Tak, we learned a simple, profound truth: to grow coffee is to preserve the forest. It’s a way of life that honors nature, from seed to roast. We’ve taken what the mountains taught us and brought it to the lecture halls. At RMUTL Lampang, we share roasting fundamentals so farmers can control their own quality. At Thammasat University’s Design Management program, we talk about innovation. Because alongside a deep respect for nature, a sharp design mindset is what will push the next generation of Thai coffee forward.

กาแฟที่ดีไม่ได้เริ่มต้นหน้าเครื่องคั่ว แต่เริ่มต้นจากผืนดิน การเดินทางสู่แหล่งปลูกอราบิกาและชาอัสสัมในเชียงรายและเชียงใหม่ ทำให้เราได้สัมผัสถึงวิถีชีวิตที่เข้มแข็งและผูกพันกับธรรมชาติ ณ บ้านเลอตอโกลด์ จังหวัดตาก เราค้นพบปรัชญาที่เรียบง่ายแต่งดงามว่า แท้จริงแล้วการปลูกกาแฟคือการอนุรักษ์ป่า คือการสร้างวิถีชีวิตที่เคารพธรรมชาติในทุกขั้นตอน ตั้งแต่เมล็ดพันธุ์ไปจนถึงการคั่ว เรานำบทเรียนจากขุนเขา มาส่งต่อในห้องเรียน ที่ มทร.ล้านนา ลำปาง เราลงพื้นที่แบ่งปันเทคนิคการคั่ว เพื่อให้เกษตรกรสามารถควบคุมคุณภาพผลผลิตได้ด้วยตัวเอง ขณะเดียวกัน ณ ภาควิชา Design Management มหาวิทยาลัยธรรมศาสตร์ เราได้แลกเปลี่ยนมุมมองด้านการพัฒนานวัตกรรม (Design Development & Product Innovation) เพราะเราเชื่อว่านอกเหนือจากความเข้าใจในธรรมชาติแล้ว วิธีคิดด้านการออกแบบ (Design Thinking) ที่เฉียบคม คือเครื่องมือสำคัญที่จะเปิดมุมมองให้นักศึกษารุ่นใหม่ สร้างความเป็นไปได้ใหม่ๆ ให้กับวงการกาแฟไทย

Growth is never a solitary journey. It happens when knowledge is shared. Today, our Bullet R1 User Group is home to over 6,000 members. Down South, Princess of Naradhiwas University is turning roasting techniques into research that uplifts local Robusta farmers. Up North at the Omkoi Royal Project, we’re proud to play a small part in a partner’s vision, helping bring essential roasting technology to highland communities. Looking back, it’s a privilege just to walk alongside these journeys. From farmers protecting watershed forests, to a young mind falling in love with coffee at fifteen and building a café community. We watch with quiet admiration as champions pour their hearts into practice, small shops steadily grow, and people brave career changes to find a new rhythm behind the roaster. Seeing them grow through sheer love for the craft is our greatest inspiration. This isn’t just business. It’s an ecosystem lifting itself up. When a community thrives, we all do.

การเติบโตไม่เคยเกิดขึ้นเพียงลำพัง แต่งอกงามได้ผ่านการแบ่งปัน ปัจจุบันกลุ่ม Aillio Thailand Bullet R1 User Group ได้กลายเป็นบ้านของสมาชิกกว่า 6,000 คน ในภาคใต้ คณะเกษตรศาสตร์ มหาวิทยาลัยนราธิวาสราชนครินทร์ ได้นำเทคนิคการคั่วไปต่อยอดเป็นงานวิจัยเพื่อยกระดับกาแฟและชีวิตของเกษตรกร ขณะเดียวกัน ณ ศูนย์เรียนรู้การพัฒนาอมก๋อย ตามพระราชดำริฯ เราภูมิใจที่ได้เป็นส่วนเล็กๆ ในการสนับสนุนวิสัยทัศน์ของพันธมิตร ผู้ริเริ่มโครงการส่งมอบเทคโนโลยีเครื่องคั่วกาแฟให้ถึงมือชุมชนบนพื้นที่สูง

เมื่อมองย้อนกลับไป เราอิ่มเอมใจเสมอที่ได้ก้าวเดินเคียงข้างทุกคน ตั้งแต่เกษตรกรผู้มุ่งมั่นปกป้องป่าต้นน้ำ ไปจนถึงใครบางคนที่เริ่มหลงใหลในกาแฟตั้งแต่อายุ 15 จนวันนี้ได้เปิดร้านและสร้างคอมมูนิตี้ที่เกื้อกูลกัน เราชื่นชมจากใจเมื่อได้เห็นแชมป์นักคั่วทุ่มเทฝึกซ้อมอย่างหนัก ได้เห็นร้านเล็กๆ ค่อยๆ เติบโตอย่างมั่นคง และได้เห็นคนที่กล้าก้าวออกจากสายอาชีพเดิมๆ เพื่อมาตามหาจังหวะชีวิตใหม่หน้าเครื่องคั่วกาแฟจนค้นพบวิถีทางของตัวเอง การได้เฝ้ามองทุกคนเติบโตผ่านความรักในสิ่งที่ทำ คือแรงบันดาลใจอันยิ่งใหญ่ของเราเสมอมา สิ่งเหล่านี้พิสูจน์ให้เห็นว่า นี่ไม่ใช่แค่เรื่องของธุรกิจ แต่คือพื้นที่ที่ทุกคนช่วยกันโอบอุ้ม เพราะเมื่อชุมชนเติบโต เราทุกคนก็ก้าวไปข้างหน้าพร้อมกัน
